This tantalizing, dreamy snack is probably the most famous dish to come out of the Jiangnan region of China, but one of the most time-consuming to make from scratch. The secret to getting the soup into a Chinese soup dumpling is to create a rich pork aspic using collagen/gelatin-rich pork skin and neck bones.
The most traditional recipes make the broth with water and pork bones. Scallions, Chinese rice wine, ginger, garlic, white pepper, and other herbs or traditional seasonings could be used. The bones have a tremendous amount of gelatin, which means once the stock has chilled, it turns into a mass of pork “gel,” which is exactly what melts right out of the hot dumpling and onto your spoon.
Soup dumplings are delicious bouncy little morsels of happiness filled with soup and MORE happiness! How do you eat one without it exploding in your mouth? Once the dumplings are steamed, pork aspic melt and form that piping hot goodness you get when you bite in.
